Famous Spanish Paella launched at Food & The Fish Factory Restaurants!

Have you visited us at Food yet on Sundays to sample our famous paella dish? If not you have been missing out! We have launched our paella plate available on alternate Sundays at Food and The Fish Factory Worthing for only £10 a plate! We have been selling out by the end of the day so come and try for yourself and let us know what you think of our version of this famous dish.

Paella is currently an internationally-known rice dish from Spain. It originated in the fields of a region called Valencia on the eastern coast of Spain. Today paella is made in every region of Spain, using just about any kind of ingredient that goes well with rice. There are as many versions of paella as there are cooks. It may contain chicken, pork, shellfish, fish, eel, squid, beans, peas, artichokes or peppers. Saffron, the spice that also turns the rice a wonderful golden colour is an essential part of the dish. Wondering what is in our paella…?

Did you also know there is an old story of how the Moorish Kings’ servants created rice dishes by mixing the left-overs from royal banquets in large pots to take home. It is said by some that the word paella originates from the Arab word “baqiyah” meaning left-overs. However, linguists believe that the word paella comes from the name of the pan it is made in – the Latin term patella, a flat plate on which offerings were made to the Gods.

Food abandons menu…biggest change to menu in 7 years!

New Food menu...

We have been working hard at Food restaurant for the last 6 months to re-design many of our unique dishes. Don’t panic as most of your favourites will still be there in some format, but at least 50% of the dishes are now new and yes, you guessed it, brand new stories too.

Eat your heart out, like Fifty Shades of Grey with dishes like new starters such as Boutique Ribs, Crab Cheesecake and Goats Cheese Tartlet to tempt you… and new mains Confit Lamb Shoulder which is Food’s interpretation of a famous Greek dish called Kleftiko, or how about Blackened Prawn and Pork Tenderloin if you are a lover of BBQ. Another exciting dish we are looking forward to launching is the Venison Chermoula Tagine. If you did not know already a tagine is cone-shaped to allow heat to build up at the top of the cone, which then builds up moisture. The moisture drips back down onto the foods, allowing for very moist and tender venison.

Just to say the Splash FM Awards on 21 March was a great success and was thoroughly enjoyed by all who attended. We would like to congratulate everyone who received their well deserved award on the night. There was not a dry eye in the house by the end of the ceremony!

Food restaurant wins 1st place in national awards!

Food restaurant has been recognised as one of the country’s most loved businesses in The Best of Worthing’s 14 days of love compaign and also holds a prestigious place on the The Best of Worthing Love-O-Meter.

The scale of this year’s campaign was, by quite some margin, the biggest ever, with an average of almost 10 reviews a minute being added across the country during the 14 days of the campaign. We would like to take this opportunity to thank all our customers who voted for us and who made this possible, along with Melanie Peters, Managing Director at The Best of Worthing.

Haggis V Whiskey – 1/1

Thank you to everyone who attended our Robert Burns Celebration Dinner on Monday 28 January at Food restaurant…what a great night and a full house!

Once the evening kicked off at 7 pm guests were serenaded by Pipe Major Donald Brown (as seen on TV & British Gold Medal Holder). Guests were also treated to a hot toddy with a twist on arrival which went down well!

The Selkirk Grace was then open and Pipe Major Donald Brown lead the procession of the haggis, along with our Executive Chef from Food restaurant. Following this procession, our toast master for the evening, actor and bafta nominated Daniel Beales performed the age old address to the haggis.

Guests were then treated to a three course luxurious meal, from Scottish table favourites…

Swag Arts Group were also in attendance performing some traditional Scottish poems. The evening was then followed with some excellent whisky cocktails and the party went on till late with a Scottish themed disco which was compared by Splash FM.

The evening was a great success and we have had fantastic feedback from guests who attended who have been asking…when is the next event at Food!

“Bike Drag Race” for Charity!

Proto Restaurant Group has, along with the help of Quest Adventure, enrolled 10 of our staff onto the Cycle to Work UK Government scheme which is a tax exemption initiative introduced to promote healthier journeys to work and to reduce environmental pollution. It allows employers to loan cycles and cyclists’ safety equipment to employees as a tax-free benefit. The exemption was one of a series of measures introduced under the Government’s Green Transport Plan.

So, in order to kick start a healthy beginning to 2013 for some of our employees who decided to take advantage of the Cycle to Work Scheme, we decided to enter them into a company bike drag race on Worthing seafront. What better way to start the new year and get them on their bikes…

All employees who entered the race paid £10 which started from Worthing Pier and finished at the Sea Lane Cafe, in Goring-by-Sea so a 3 mile sprint in total and their £10 donation went to the Love Your Hospitals charity which Andy Sparsis, owner of Food and The Fish Factory is a proud patron of. In order to entice the staff to enter the race on a cold sunny winter’s morning, once they all completed the race it was straight to the Sea Lane Cafe for a well deserved fry up!

And the winner is...Troy Webb from The Fish Factory, Worthing

Number 1 Christmas Album to be released by Proto!

It’s the moment you have all been waiting for…X Factor here we come! Our very own Chef’s Choir brought to you from Proto Restaurant Group have made a Christmas album to raise money for the Love Your Hospitals charity and we know you can’t wait to get your hands on a copy!

It is available now and you can get your hands on a copy of the CD from Food restaurant and The Fish Factory restaurants, (Worthing and Littlehampton) as well as the main reception of Worthing Hospital and Splash FM reception (during weekday office hours). Called “Chef’s Choir”, the CD contains four Christmas favourites, performed in the chef’s own…er…inimitable style! You can own one of these legendary CD’s for a charitable donation of between £3 to £5 and every penny goes to the Love Your Hospitals charity.

Proto Restaurant Group judges Rotary Young Chef Competition 2012

For the fourth year running Proto Restaurant Group was asked to judge the Worthing Rotary Young Chef competition and we sent one of our Executive Chefs Stuart Slevin to do the honours. This competition is open to all secondary schools in Great Britain and Ireland (ages 11 to 17) in search of the Rotary Young Chef for 2012.

The contestants had to prepare and present their three course meals for judging by an expert panel. This year it was Rebekah Cheeseman who took the top chef title and she wins an amazing trip to Tuscany to sample the fantastic Italian cuisine there. Her three course menu excited the judges with a rich blend of flavours and excellent use of ingredients. As well as her amazing trip to Tuscany to look forward to, Rebekah also has the opportunity to spend a day at Food restaurant working alongside one of our Executive Chefs and creating her own dessert which we can’t wait to try!

Proto Restaurant Group is proud to be involved with the competition for another year as we believe it is highly important to encourage young people to be creative and this includes developing creativity in the kitchen. Cooking amongst young people is a growing interest and something that we at Proto Restaurant Group highly encourage.

Meet the team – Robert Stubbs

It’s that time again to meet a member of the Proto Restaurant Group team and this week we have interviewed Robert Stubbs, a chef at Food restaurant to find out what his likes/dislikes are.

How long have you worked at Food restaurant?

Since April this year, so just over the 6 month mark now!

So what did you do before working for Proto Restaurant Group then?

I worked at a local hotel for a few months and I was also studying at Northbrook College doing catering and hospitality.

How are you finding your role as chef at Food?

So far my time at Food has been very enjoyable and challenging and a great experience in order for me to further my career.

What is the best part of your job so far?

The best part is how much I am learning and being able to build up my knowledge of cooking good food and being part of a team and I am very priviliged to be the youngest chef in the kitchen…..well so I have been told!

How did you come to work at Food restaurant?

I competed in a local cooking competition run by The Rotary Club where I reached the district final. Andy Sparsis, owner of Proto Restaurant Group, judged the competition and offered me the fantastic opportunity to work at Food.

What is your recommended dish for us then?

Ooh well, I enjoy cooking all the dishes but the dish which pushes the limit of your taste buds has to be The Admirals Luncheon so this has to be my recommended dish. It has a piece of everything on one plate which offers a great choice!

What are your interests other than cooking?

The usual recreational activities really. I have always enjoyed sports from a young age and I have a black belt in kick boxing which has been one of my greatest achievements. I also enjoy going to the gym and fishing.
