Have you visited us at Food yet on Sundays to sample our famous paella dish?  If not you have been missing out!  We have launched our paella plate available on alternate Sundays at Food and The Fish Factory Worthing for only £10 a plate!  We have been selling out by the end of the day so come and try for yourself and let us know what you think of our version of this famous dish.

Paella is currently an internationally-known rice dish from Spain. It originated in the fields of a region called Valencia on the eastern coast of Spain. Today paella is made in every region of Spain, using just about any kind of ingredient that goes well with rice. There are as many versions of paella as there are cooks. It may contain chicken, pork, shellfish, fish, eel, squid, beans, peas, artichokes or peppers. Saffron, the spice that also turns the rice a wonderful golden colour is an essential part of the dish.  Wondering what is in our paella…?

Did you also know there is an old story of how the Moorish Kings’ servants created rice dishes by mixing the left-overs from royal banquets in large pots to take home. It is said by some that the word paella originates from the Arab word “baqiyah” meaning left-overs. However, linguists believe that the word paella comes from the name of the pan it is made in – the Latin term patella, a flat plate on which offerings were made to the Gods.

The Fish Factory launched it’s brand new spoil menu last Friday, 19 October and what a reaction!  We have kept some customer favourite dishes on the menu including the Bouillabaisse and The Fish Wellington.

One of the new additions, Arancini ai Gamberetti - Sicilian traditional paella seafood balls filled with wine seared shellfish, herbs and cream.  Served golden brown with spiced tomato & orange peel sauce for only £6.50 has given everyone who visits The Fish Factory another fantastic dish to choose from.

The spoil menu also welcomes Tajine Al Houtt – Saffron, spring onions and ginger spiced cod balls roasted into a Chermoulian tomato sauce and served on fragrant rice for just £11 and this dish is a must and we have already had some fantastic feedback with customers so come down and try it for yourself to see what all the fuss is about!

It’s new, it’s exciting … It’s a new way to eat at Food restaurant – our new menu called “The Diplomat” which is available at Food from 8th May 2012.

Our award-winning chefs have spent days and months designing this new menu with you in mind.  At Food restaurant we have worked to design exquisite dishes with the finest quality but, with exception, we have managed to develop them so they cost you less than ever before.  For 2 courses £12.80 and 3 for £15.00 we are hopeful that we have managed to get a price that can’t be beaten, even if you were to try and cook these dishes at home, why have the stress? The Diplomat unique dishes are not to be missed and they include our latest inventions such as Steak Au Pouvoir, which is prime braised steak sealed in pink peppercorns and garlic butter, oven roasted with mushrooms and red wine, served with pan fried spring greens and roast potatoes. And also our Creole Panga Crumble which is filleted panga, topped with south American spices and breadcrumbs,  oven baked, served with coconut and turmeric rice.

The Fish Factory launched it’s brand new spoil menu last Friday – 10th February – and it has been met with a great reaction over Valentines weekend and the past week.

The addition of EmpanadillasRope grown mussels, Greenland prawns, line caught cod and potato croutons mixed with a paprika cheese sauce and fried in a Spanish beer pastry parcel – at the bargain price of just £6 has given everybody that visits The Fish Factory another brilliant dish to choose from.

The spoil menu also welcomes our very own Baker Street WhitingPolenta dusted local whiting pan fried and baked with garlic sauté potatoes topped with spring onions – for just £10 and we have already had some fantastic feedback with customers already claiming this is one of their favourite dishes in the restaurant.

New Express Luncheon Menu at Food Restaurant

Food Restaurant, in New Street, Worthing, has launched it’s new and updated Express Luncheon Menu for early 2012. The menu, which has been updated with the addition of dishes such as the “Down Town Cyprus Sandwich – A charcoal grilled pork skewer flavoured with crushed oregano seeds and olive oil, served in a stone baked pita bread with coriander salad and french fries!” is already proving very popular, and also has a Vegetarian alternative.

Another new dish on the menu is the “Moscow Merchant’s Kiev” - British chicken breast minced and stuffed with garlic butter, leeks and chives. Oven baked in bread crumbs served with mash potato. This is one of the favourite dishes in the restaurant at the moment and we really recommend you come in and experience it for yourself. Meet the Team – Stuart Slevin

So it’s been a year since we interviewed Stuart Slevin, the Executive Chef at The Fish Factory, so we thought we would speak to him again to see how his year in the job has been!

How are you finding the role of Executive Chef at The Fish Factory?

It’s brilliant. Obviously there are added pressures being the Executive Chef but im getting to do lots of other things like Health & Safety and Food Hygiene checks which is really good. The NVQ in Management that I completed before we spoke last year has come in really handy and I now have lots of lovely spreadsheets and training documents everywhere, which is nice because it’s what I’m interested in anyway!

Has anything changed in your role during the year?

I’ve basically just gained more and more responsibility as the year has gone on really. I’m now the Premises Alcohol License Holder which means that any sales of alcohol are my responsibility so it’s important I ensure everybody is following the appropriate age laws which to be fair, everybody here is excellent at doing.

The management side of things has really taken a prominent role as well, im doing a lot more consulting with the restaurant managers and other chefs which is also nice.

What does 2012 have in store for the menus?

Well, we are updating the spoil menu for the new year, including bringing back the Bouillabaisse after so many requests! Since we last spoke as well, we have introduced Sunday Roasts at The Fish Factory, offering a choice of either Beef or Pork and we are now selling 30/40 of them each Sunday which is great! Who knows, we might add Lamb to the list too, but for the time being we’ll definately stay clear of Turkey, let everyone recover from Christmas first!

Enough about work then, what do you get up to outside of work?

I love to cycle! This year me and Proto owner Andy Sparsis completed the London to Brighton bike race which was brilliant! It was my 18th time completing the course but my first for 5 years so I really enjoyed getting back into it. As part of that, we initiated a cycle to work scheme for Proto Restaurant Group and now numerous members of staff at Proto cycle into work everyday which is just fantastic!

So, the Olympic year has arrived, being a keen cyclist are you excited?

To be honest, im still quite upset about the ticketing for the event! It’s disappointing that so many people couldn’t get hold of tickets for such a once-in-a-lifetime event in this country, I just feel like we’ve all been scammed!

That said though, obviously not everyone that comes over for the games will be staying in London, so hopefully with our excellent position on the coast with good transport links to London, plenty of people will come and stay in Worthing and Littlehampton and bring us lots more business. It can only be good for businesses in our area.

Food restaurant receives facelift!

Proto Restaurant Group are pleased to announce the completion of the facelift work that has been going on at Food restaurant in Worthing, West Sussex. Work has been under way for the last few weeks to give Food a fresh look, but don’t worry, we haven’t changed too much of our much loved restaurant.

Andy Sparsis, owner of Proto Restaurant Group had the following to say about the changes:

“Food has kept the same good looking body, same lovely hands and same long legs, but we have had a snazzy new haircut so come in and check us out for yourself! Food is sexier than ever!”

Not only have we changed the physical appearance of the restaurant but we have been making some special changes to the menu making it bigger and better than before! The new menu now includes some more unique and exciting dishes and we have some real treats for you!

Our Starters have been boosted by the addition of our “Berliners Breakfast” – Knockwurst Sausage in a Black Pudding sandwich – and our “Samphire Scallops” – Scallops with garlic samphire sea vegetables. Check out our starters menu for more details along with the full lineup!

Our Main Menu just keeps getting better as well with our “Lobster Polenta Soufflé”, “Louisiana Street Food” and “The Admiral’s Luncheon”. Trust us when we say that descriptions do not do these dishes justice, you have to come in and try them for yourself!

From now on, once a month we will be doing a feature on a member of the Proto team so that you can get to know who does what around the Proto Restaurant Group. First up, and the focus of todays post is Stuart Slevin, the newly promoted Executive Chef at The Fish Factory, Worthing.

Everyone at Proto is proud of Stuart as he has qualified for his NVQ Level 4 in Management, that’s the equivalent to a full degree. We thought we would ask him a few questions so we could find out more about him:

How long have you worked at The Fish Factory?

5 years now. Blimey! Where does time go? I have loved every minute of working at The Fish Factory and for the Proto Restaurant Group and have found it a fantastic challenge, not to mention being part of the opening process of The Fish Factory, Littlehampton, which I have to say, I owe a lot of thanks to my NVQ for helping me with.

Tell us more about this NVQ, sounds very impressive!

Well, thank you very much! It’s hard to explain the course as it covered so many key areas, but it basically helped me look at my job from a directors point of view. It taught me to take each task that I undertake and describe how they fit into certain categories such as health and safety, staff morale, project management and financial budgeting.

You must have a fancy title with that qualification, what do we refer to you as now?

Well yes I do! I am now officially Stuart Slevin MImstLM. That stands for a Member of the Institute of Leadership and Management.

What is your favourite dish to cook?

Anything Fish based really. It’s such a challenge to cook fish; people say its really easy, but 20 seconds too long and the fish is dry and 20 seconds too short and the fish is really wet. I love the challenge of coming up with new few dishes which are enticing for the customers. I guess I’m at the right place at The Fish Factory.

Do you have any pet-hates in the kitchen?

Oooh, I could get in some trouble for answering this one! I guess when I am asked a trivial question when I’m trying to organise everything! My Job is about multi-tasking and being interrupted to be asked what time im finishing can be quite frustrating.

What’s in store for 2011, any new recipes/dishes?

We have just launched The Fish Factory’s updated Spoil Menu which has some fantastic new dishes in, including a Shrimp and Saffron Risotto, and Bouillabaisse. I’m particularly partial to the Bouillabaisse as it takes such an effort to prepare, around 4 hours in total, but it’s so worth it.

So what are we serving this year? And how much?

First off, we have frozen prices this year – so you can dine with us and relax knowing that your bank manager will still love you! You will also be pleased to know that we will be serving traditional Christmas dinner at Food, and at both of our Fish Factory restaurants. There is something for everyone – with vegetarians also well catered for.

If you fancy the infamous ambience of Food restaurant, for starters, you can choose from four delicious dishes, including Sussex Pork & Game Ale Knackwurst which is a sausage recipe of pork and game, fresh herbs served with sweetened shallots, cooked to perfection by our award-winning chef. For the main course, you can choose from five beautiful dishes including: Coriander & Sage Dusted Lamb, which is dressed rump served with leek & mustard potato mash and a vegetable parcel.
