My friend collects historical postcards, usually at this point I stop listening, but this postcard came from New Amsterdam (New York) received to Lymington NS. It reads: !Iam dining on your fish supper. The smoked haddock, cod roe, fish and cheese sauce over fillet of salmon and wrapped into a pastry envelope. It does so absolutely bring me home for the briefest of moments. Your forever loving son! I wonder if this good lady was the founder of the pastry. Served with vegetable parcel and parmentier potatoes.
